Walkerswood's Pumpkin Soup - Prepared and Cooked in 45 Minutes)

Preparation time: 15 minutes + 30 minutes cooking
Melt the butter or margarine in a medium saucepan and saute the onion and spring onions. Add the water and remaining ingredients. Bring to the boil and then simmer for 30 minutes. Cool and blend in a food processor. Warm again before serving.

1 large onion, chopped
3 spring onion stalks, chopped
25g/2 tbsp butter or margarine
1.2 litres/5 cups water
1kg/2lb peeled pumpkin flesh, coarsely chopped
3 tomatoes, skinned and chopped
150ml/generous half cup Walkerswood Coconut Milk
Quarter tsp grated nutmeg
Salt and pepper, to taste
A drop of Walkerswood Scotch Bonnet Sauce or Jonkanoo Sauce (optional)

Tip: Garnish with a dollop of sour cream or yogurt, if you like.
